{"id":1089,"date":"2021-09-14T13:17:35","date_gmt":"2021-09-14T18:17:35","guid":{"rendered":"https:\/\/loosestringsfromthepast.com\/?p=1089"},"modified":"2021-09-14T13:35:55","modified_gmt":"2021-09-14T18:35:55","slug":"williams-dairy","status":"publish","type":"post","link":"https:\/\/loosestringsfromthepast.com\/?p=1089","title":{"rendered":"Williams Dairy"},"content":{"rendered":"<figure id=\"attachment_1107\" aria-describedby=\"caption-attachment-1107\" style=\"width: 150px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210912_111850-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1107 size-thumbnail\" src=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210912_111850-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><figcaption id=\"caption-attachment-1107\" class=\"wp-caption-text\">Rankin Williams<br \/>Roger Williams<br \/>Carroll Williams<\/figcaption><\/figure>\n<p>The Williams Dairy began in Necessity, Texas, a community in Southeast Stephens County.\u00a0 My Dad, Rankin Williams, was a farmer who began milking some cows.\u00a0 He sold the milk in Breckenridge.<\/p>\n<p>My brother, Carrolll . was involved from an early age.\u00a0 Carroll was driving before he could reach the pedals on the floor of the vehicle.\u00a0 He stood to drive.\u00a0 The neighbors watched in amusement every morning as he drove by before school taking the cans of milk a short distance to a neighbor, Sam Taylor, who took the milk on into Breckenridge.<\/p>\n<p>In the early 1930s, the dairy was moved east of Breckenridge to a location on Highway 180.\u00a0 The cows were herded to the new location. They were milked in Necessity in the morning and in Breckenridge in the evening.\u00a0 Carroll moved the bull later in their stock trailer.\u00a0 He looked in the rearview mirror and realized the bull was running.\u00a0 He stopped. The bull had stepped through some rotten boards in the bottom of the trailer and was trying to keep up with the pickup.<\/p>\n<figure id=\"attachment_1102\" aria-describedby=\"caption-attachment-1102\" style=\"width: 150px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210826_095946-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1102 size-thumbnail\" src=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210826_095946-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><figcaption id=\"caption-attachment-1102\" class=\"wp-caption-text\">milking stool<\/figcaption><\/figure>\n<figure id=\"attachment_1099\" aria-describedby=\"caption-attachment-1099\" style=\"width: 150px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210826_100010-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1099 size-thumbnail\" src=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210826_100010-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><figcaption id=\"caption-attachment-1099\" class=\"wp-caption-text\">useful item<\/figcaption><\/figure>\n<ul>\n<li style=\"text-align: left;\">The only location I remember was one mile south of Breckenridge on the west side of US Highway 183.\u00a0 By this time, the milk was being retailed.\u00a0 Milk was delivered to homes, grocery stores, and cafes. Milk was often taken inside a home and put inside the icebox or refrigerator.\u00a0 Frequently this was before the family had begun their day.<\/li>\n<\/ul>\n<p>Working with the milk was a family affair. I watched as the milk was processed.\u00a0 As soon as I was old enough, I helped.\u00a0 Putting empty milk bottles on the bottling machine and putting filled ones into cases was probably my first helpful task\u00a0 Eventually, I could fill the bottles, cap them, and put them into the cases.\u00a0 Our little machine filled two quarts at a time.<\/p>\n<p style=\"text-align: left;\">My regular job became washing the glass bottles.\u00a0 In elementary school, I got off the school bus, went to the milk house, counted the number of cases of dirty bottles, and estimated how long it would take to wash them.\u00a0 I then changed clothes and began my job.<\/p>\n<p>The bottles were washed one at a time on a brush rotated by an electric motor. They went from the wash into the water with disinfectant.\u00a0 I called it the \u201cBK\u201d rinse.\u00a0 The \u201cbacteria killer\u201d was a powder that came in a barrel.\u00a0 Last was a clear water rinse.\u00a0 The bottles were turned upside down in the cases to drain and dry.\u00a0 The cases were on rolling dollies.\u00a0 The milk house cement floor was slightly slanted toward floor drains. Dry bottles went into another room where they were filled.\u00a0 The third room contained a heavily insulated cold storage vault. The milk was stored there until it was delivered.<\/p>\n<figure id=\"attachment_1100\" aria-describedby=\"caption-attachment-1100\" style=\"width: 150px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210826_095916-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1100 size-thumbnail\" src=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210826_095916-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><figcaption id=\"caption-attachment-1100\" class=\"wp-caption-text\">glass bottle in case<\/figcaption><\/figure>\n<p>When I started junior high, I was replaced by an automatic bottle washing machine.\u00a0 It was a monster, and the room had to be enlarged.\u00a0 Two neighbor boys were hired to operate it.\u00a0 I liked to joke that it took two to replace me.\u00a0 I didn\u2019t add that they had other jobs also.<\/p>\n<figure id=\"attachment_1098\" aria-describedby=\"caption-attachment-1098\" style=\"width: 150px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210826_095849-3-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1098 size-thumbnail\" src=\"https:\/\/loosestringsfromthepast.com\/wp-content\/uploads\/2021\/09\/20210826_095849-3-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><figcaption id=\"caption-attachment-1098\" class=\"wp-caption-text\">the case has another use<\/figcaption><\/figure>\n<p>Some milk customers paid by putting coins inside the empty bottles. Others paid monthly. (Some never paid at all.) I separated the coins and rolled them in the paper provided by the bank.\u00a0 I got the pennies.\u00a0 One of the customers owned a jewelry store.\u00a0 In 5<sup>th<\/sup> grade, I had enough money to buy a Bulova watch from Edwards Jewelry Store.\u00a0 I wore that watch until I married, and Ken bought me a new one.\u00a0 I still have the watch.<\/p>\n<p>I had my own customer.\u00a0 A local business owner lived in the Burch Hotel and only got milk once a week.\u00a0 I would go on the route with Dad, ride the elevator up to their apartment, take the milk in, and put it in their refrigerator.\u00a0 There was one problem.\u00a0 They never paid their bill.<\/p>\n<p>When the milk began to be pasteurized, customers didn\u2019t like the \u201ccooked\u201d taste, so only a portion was pasteurized.\u00a0 Gradually, it was all pasteurized.\u00a0 Then customers didn\u2019t like homogenized milk because there was no cream on the top.\u00a0 Eventually, it was all pasteurized, homogenized milk.<\/p>\n<p>The cows were tested and the dairy inspected on a regular basis to maintain its Grade A rating.<\/p>\n<p>I have fond memories of the dairy employees.\u00a0 Dad\u2019s cousin, Finis Williams, was a delivery man.\u00a0 His wife, Gladys, worked in the milk house for several years.\u00a0 Carroll\u2019s father-in-law, Albert Linam, milked the cows for many years.\u00a0 His mother-in-law, Emma Linam,\u00a0 worked in the milk house for a short time.<\/p>\n<p>In the late fifties, the dairy was sold to Boswell Dairy of Fort Worth. They really just bought the customer list.\u00a0 The equipment was too small for their operation.<\/p>\n<p>My dad did not make an issue of customers not paying their bills.
